Asparagus Salad with Bacon and A Six Minute Egg For French Fridays with Dorie

Fresh locally grown asparagus has been in our markets for awhile, just in time to make this wonderful salad recipe from Around My French Table by Dorie Greenspan.  The 6 minute eggs on top of the salad add the perfect finishing touch to the asparagus and the bacon.  I used mixed baby greens, toasted hazelnuts and apple wood smoked bacon in my salad.  I started the asparagus by dropping a handful in boiling salted water for just a few minutes.  Then I roasted them in a hot oven coated with extra virgin olive oil and sea salt until lightly browned and tender.

Except for a few small changes this is a close rendition of Dorie’s recipe for Bacon Eggs and Asparagus Salad from Around My French Table.  I knew this recipe would be a keeper the first time I saw the beautiful photo of it in the book.  Asparagus and eggs are a natural served on top of this green salad along with the smoky pieces of bacon and chopped hazelnuts, I could eat a salad like this one every week and not get tired of it.  I did open a bottle of Ridge Chardonnay which complimented this salad wonderfully  Just a note, I could open a bottle of Ridge Chardonnay every week and not get tired of that either!

  1. Beautiful! The buttery Chardonnay must have been wonderful against the rich egg yolk.

  2. I could eat this salad every week too and vary the vinaigrette, nuts and salad greens. I really like your addition of hazelnuts, I've never had them in salad before!

  3. Gorgeous gorgeous photos!! We had chardonnay with ours, too – I didn't think any wine would work but ours went great (it was a very very light one, though). I will have to look for the Ridge!

  4. Agree on all points – could eat this salad all the time and I'll never get tired of wine! Beautiful photography. Also like that you roasted the asparagus.

  5. Patty, this is one beautiful and delicious looking salad! Great job on the egg, too. I could definitely enjoy this very much for lunch today! :) Thanks for sharing. Have a great weekend!

  6. Beautifully plated salad, Patty! Your egg is just perfect (even though I wouldn't have eaten it! Well, maybe at someone else's house :)).

  7. Beautiful photos! Your salad looks delicious! I plan on making this wonderful salad all summer long! Enjoy your week-end!

  8. Your salad looks fantastic! If it weren't for the fact that I had to be at work earlier than usual, I definitely would've paired my salad with a chardonnay like you did!

  9. Such a pretty salad! And I am with Lizzy – the egg dripping down over the salad is visually appealing.

  10. So lovely. I was like you when I saw the photo for the first time. I knew I would love it. And I am loving the term Doristas. Very fitting. :-)

  11. Gorgeous!

  12. Beautiful! I loved the salad, too, and enjoyed a chardonnay with it as well.

  13. Very nice – it looks beautiful and delicious!

  14. Just beautiful, Patty! Nice idea to finish the asparagus off in the oven. I usually roast my asparagus, so boiling was different for me. Great post!

  15. Your photos are fabulous. I love the idea of roasted asparagus on the salad — and the hazelnuts look great. I used walnuts to match the walnut oil, but next time…

  16. I'm also in love with this salad…I wish I could have it again…soon!
Now I am going to eat up your photos…beautiful!!

  17. LOL at “Just a note, I could open a bottle of Ridge Chardonnay every week and not get tired of that either.” You are just too cute. I don't like salads much and I don't make many salads, but now I have a whole new respect for salads (the moment I laid eyes on this beauty). Such wonderful tastes, textures and colour combos all in one dish. Adding a runny egg like that to anything would make it the perfect comfort food for me. Even something as cool and refreshing as this beautiful salad. This is one salad that has it all together. Another divine dish, Patty! Enjoy your weekend, dear!

  18. Spectacular!

A fellow blogger sent me here–as I too have just indulged in Dorie's Around My French Table. (did not know of the French Fridays)

What I also enjoy about Dorie's book is reading about the local customs, the ambiance–all so earthy, alive and satisfying.

My enduring enchantment with French food–classic or contemporary– is the ability to create something so sublime from rather humble ingredients.

So much fun to “meet” you Patty. I will peek in again next Friday!!
    P.S. those adorable G-children in your Mother's Day post are heart-thieves : )

  19. Patty, Aunty Belle beat me over here. She just got Dorie's cookbook too, so I had to send her to see your beautiful blog and photos! Being the wine lover I am, I'm surprised to say that I don't think I've ever drunk wine with eggs (besides the obligatory mimosa at brunch!) I love poached eggs over salad, well done!

  20. Of the last 4 weeks I have been traveling 3 so had to miss this one but you are my first stop to see what it looked like! Fantastic. I am with you. I can tell this is a winner by your photo so will make it this week and play catch up. Gorgeous as always !

  21. Yes, I could eat a salad like this nearly every day! And, the Ridge is from Santa Cruz – will have to visit when I'm there in just a few weeks.

  22. What a perfect salad and wine! I bet it was stunning paring. Enjoy the beautiful weekend!!

  23. So happy to see someone else embracing the runny yolk! Sad I didn't have time for this one … next time! : )

  24. Beautiful salad…I love roasted or grilled asparagus! I have been looking for some baby asparagus…
Hope your having a great weekend and had fun at the Farmers Market this morning :)

  25. hey Patty, been seeing this all over the circles but waited to look at yours and glad I did… nice touch with the egg and amazing with the grilled stalks.. just perfect as usual …

  26. Wonderful salad, great presentation and wonderful photography! I'm a new follower :-)

  27. Your salad and wine combination sound fantastic. I don't think I'd have made this recipe without the impetus of French Fridays – I'm so glad I did! We loved it. I think I'll try this will grilled asparagus next time, as it sounds like a great fit.

    Your photos (as usual) rock.

  28. I really love how elegant this looks!! just gorgeous:)

  29. Just lovely, my dear. Your egg looks divine. I want to make it for the egg alone. I agree…this does look so very elegant! Thank you for sharing with me tonight. I hope you have a wonderful day tomorrow!

  30. This looks absolutely delicious I may have to break down and buy that cookbook too!

  31. Una preciosidad! Divino y rico.

  32. Patty, I'm drooling over here. Your salad is so beautiful and it's just about lunchtime–how disappointed I am that I don't have this in front of me. This salad has everything I like in it. I'm sure I would love this. In fact, this is going on the menu for this week. Thanks so much for the inspiration!

  33. Now this is my kind of salad! Patty it looks mouthwatering and I love your addition of hazelnuts. Can't wait to see what you prepare next week.
