Rhubarb Brown Butter Bars

Rhubarb Brown Butter Bars / Patty's Foodl love rhubarb.  My favorite way to eat it is either oven roasted or stewed with sugar and spices.  I love to eat stewed rhubarb in a little bowl with a small scoop of vanilla ice cream on top.  I also like to try new recipes with rhubarb, like this one for rhubarb brown butter bars.  The season for field rhubarb is a fairly short one so I want to make sure I enjoy my fair share before the bright red stalks we find in the markets fade in our memory as we move into warmer weather.

I first drooled over these jammy rhubarb bar cookies on Pinterest and then realized that I had the recipe in my copy of  The Big Sur Bakery Cookbook, lucky me!  I love a bar cookie made with homemade rhubarb jam, bright flavored tangerine juice, spices and a healthy amount of brown butter.  The rhubarb jam is spread over a pre- baked shortbread like crust and then deliciously swirled on top of  all those browned buttery layers, oh my.

I made a few small adaptions to the original recipe,  like using tangerines from my backyard tree instead of oranges.  I reluctantly admit to thinking about cutting back on some of the butter in the recipe but quickly came to my senses.

Rhubarb Brown Butter Bars / Patty's FoodThe rhubarb jam for these bars is excellent all by itself and if you can your hands on a larger quantity of rhubarb then I would suggest doubling the jam recipe to use later for spreading on your morning toast.  This recipe has a few components, first making the rhubarb jam, then pre-baking a brown butter crust, which uses a more time consuming technique than similar recipes I’ve used for bar cookie crusts and finally the brown butter filling..but it’s all so good when it comes together and so worth the extra time.

  5. This spring I planted a rhubarb plant in our garden. I am so excited that it is doing well! Until next year I will also be at the mercy of the supply at the grocery store. But that won’t stop me from making this fabulous recipe!

    These look delicious, Patty, and brought back memories. My mom made the best, best, best, best rhubarb pie ever. With meringue on top. Yep, the Iowa season was short but she made the most of it. In Aspen Michael and I always had a rhubarb patch and those little darlings would be a harbinger of Spring when the leaves started popping out of the ground. I am headed to Whole Foods today ( quite a trip in the mountains) and will check to see if any stalks are available yet. This past Winter when I was in Cambria I took a day-long field trip to the Monterey Aquarium. When I passed the Big Sur Bakery, my car just made a big left turn into their parking lot. $41.00-later (that’s the truth), I was back on the road, sugar-overload for sure. Those pastries lasted for three days and I was one happy lady.

    Patriacia, rhubarb is very popular around here (my grandma had them growing in her garden) and it is one of my favorite spring produce to make an appearance in farmers´ markets – I have been busy baking and cooking with these wonderful stalks and I am always looking for different and new ways to use them – your Rhubarb Brown Butter Bars look so tempting, I must find the time to make them for family and friends!

  12. I’m a big fan of rhubarb, too, and these bars sound wonderful. We seem to be able to get it in the market for quite a while here, though my own plant is finished for the season. Some of my mother’s friends have plants that produce through half the summer. I may have to try to get my hands on some and make these!
