Asparagus Salad with Bacon and A Six Minute Egg For French Fridays with Dorie

Fresh locally grown asparagus has been in our markets for awhile, just in time to make this wonderful salad recipe from Around My French Table by Dorie Greenspan.  The 6 minute eggs on top of the salad add the perfect finishing touch to the asparagus and the bacon.  I used mixed baby greens, toasted hazelnuts and apple wood smoked bacon in my salad.  I started the asparagus by dropping a handful in boiling salted water for just a few minutes.  Then I roasted them in a hot oven coated with extra virgin olive oil and sea salt until lightly browned and tender.

Except for a few small changes this is a close rendition of Dorie’s recipe for Bacon Eggs and Asparagus Salad from Around My French Table.  I knew this recipe would be a keeper the first time I saw the beautiful photo of it in the book.  Asparagus and eggs are a natural served on top of this green salad along with the smoky pieces of bacon and chopped hazelnuts, I could eat a salad like this one every week and not get tired of it.  I did open a bottle of Ridge Chardonnay which complimented this salad wonderfully  Just a note, I could open a bottle of Ridge Chardonnay every week and not get tired of that either!

  2. I could eat this salad every week too and vary the vinaigrette, nuts and salad greens. I really like your addition of hazelnuts, I've never had them in salad before!

I don't like salads much and I don't make many salads, but now I have a whole new respect for salads (the moment I laid eyes on this beauty). Such wonderful tastes, textures and colour combos all in one dish. Adding a runny egg like that to anything would make it the perfect comfort food for me.     What I also enjoy about Dorie's book is reading about the local customs, the ambiance–all so earthy, alive and satisfying.

    My enduring enchantment with French food–classic or contemporary– is the ability to create something so sublime from rather humble ingredients.

Being the wine lover I am, I'm surprised to say that I don't think I've ever drunk wine with eggs (besides the obligatory mimosa at brunch!) I love poached eggs over salad, well done!
