Strawberry Weekend Cake

We came home yesterday afternoon, threw open the windows and turned on the ceiling fans. Wow, finally some warm weather! Blue skies, green hills, hawks flying and water rushing in the creeks, it’s feeling like one of those hot spring weekends right before the start of summer. We’re playing a lot of golf this weekend and a friend just called and actually said, come on over we’re just sitting around the pool…I guess our rainy spring is coming to the end. Strawberries are so good right now, I’ve been thinking about making a strawberry cake for awhile. It’s been one of those kind of ideas you just keep turning around in your head until something clicks and you think that’s what I want to do! I want to make a coffee cake filled with strawberries, topped with tender buttery crumbs and I want to make it this weekend! So yesterday afternoon after opening up the house to cool it down I turned on the oven and made this cake, it was worth it, besides it really cooled down last night and we have strawberry cake for the weekend.

Ingredients and Directions

Preheat the oven to 350F

1 stick unsalted butter, at room temperature
1/2 cup sugar
2 large eggs
1 teaspoon vanilla
1 cup all purpose flour
1 & 1/2 teaspoons baking powder
1/2 teaspoon salt
3 tablespoons milk
2 cups strawberries, sliced

Crumb Topping
1/2 cup raw sugar
1 stick unsalted butter, chilled and cut in small pieces
1 cup all purpose flour

Grease an 8x4x2″ loaf pan

Using an electric stand mixer, beat the butter until light and creamy, add the sugar and continue to beat until fluffy. Beat in the eggs, then the vanilla. Stir in the flour and milk. Transfer this mixture into the prepared cake pan. Place a layer of sliced strawberries on top.
